The agave pias are roasted in traditional brick ovens for 72 hours and fermented using a special yeast blend for 80 hours. The Aejo is matured for 14 months in American white oak casks. Bottled at 40%. Nose: Soft caramel and vanilla notes. Palate: Perfect balance of sweetness from the blue weber agaves
