Alvear, Pedro Ximenez "Tres Miradas" Montilla-Moriles, Spain 2021 glutenfree and traces its roots back100% Pedro Ximnez The Tres Miradas project, from the Bodegas Alvear, represents a search for the expression of a terroir historically known as Sierra de Montilla. This wine has been made with Pedro Ximenez grapes from old bush vines, from different plots of the Riofro and Ladera de Benavente areas. The grapes were directly pressed and then fermented in the traditional concrete jars, tinajas, of 4800L. After the fermentation the wine stays in tinajas
